			<content:encoded><![CDATA[<blockquote><p>This article is to clear up information concerning cooking hamburger to a safe temperature.  An article in the last issue of “My Triangle Magazine” stated that restaurants that grind their own hamburger are allowed to serve rare or undercooked burgers.  As stated in the article, the NC Department of Environment and Natural Resources rule 15A NCAC 18A .2609 requires that ground beef be cooked to an internal temperature of 155°F.  Restaurants and bars that feature in-house ground beef are not exempt from this rule.<span id="more-152"></span>A good burger is hard to beat. The process of grinding hamburger brings pathogens from the outside of the meat to the center, where they hide out, and can cause someone to get sick.  Cooking hamburger to 155°F assures that E. coli will be killed and the burger will be safe. The only sure way to know if you’ve adequately cooked the hamburger is to check the final temperature with a food insertion thermometer, but you should not see pink inside the burger.<br />
Serving undercooked ground beef is a big liability for restaurants and endangers the public’s health. Restaurant inspectors educate food handlers on proper cook temperatures and check temperatures as part of their routine inspections. Inadequate final cook temperature is a critical violation requiring immediate correction. Wake County Environmental Services follows up on all complaints from the dining public concerning undercooked ground beef.  Adequate final cook temperatures are easily measured and one of the major steps food service establishments can do to prevent food borne illness.</p>
